Ingredients

Dough

500g self-rising flour

520g plain non-fat Greek yogurt

1 tbsp garlic salt

1 tbsp Italian seasoning

Buffalo Chicken Filling

40 oz (1135g) chicken breast

½ tbsp garlic salt

½ tbsp smoked paprika

2 tbsp ranch seasoning

½ tbsp black pepper

4 tbsp tomato salsa

1 cup diced white onion

½ cup buffalo sauce

3½ cups fat-free mozzarella cheese

Fresh chives, chopped

High-Protein Buffalo Sauce

1½ cups cottage cheese

2 oz reduced-fat cream cheese

½ tbsp garlic salt

½ tbsp black pepper

½ tbsp onion powder

½ cup buffalo sauce

¼ cup fat-free milk

Instructions

Step 1: Cook the Chicken

Place the chicken breast into a slow cooker. Season with garlic salt, smoked paprika, ranch seasoning, black pepper, tomato salsa, diced onion, and buffalo sauce.

Cook on High for 2–3 hours or until the chicken is fully cooked and easy to shred.

Alternatively, you can use cooked rotisserie chicken for a quicker version.

Step 2: Make the Buffalo Sauce

Add the cottage cheese, reduced-fat cream cheese, garlic salt, black pepper, onion powder, buffalo sauce, and fat-free milk to a blender.

Blend until completely smooth and creamy.

Step 3: Prepare the Filling

Shred the cooked chicken.

Mix the shredded chicken with the buffalo sauce, fat-free mozzarella cheese, and chopped chives until everything is evenly combined.

Step 4: Make the Dough

Combine the self-rising flour, Greek yogurt, garlic salt, and Italian seasoning in a large bowl.

Mix by hand until a rough dough forms, then knead for several minutes until smooth and elastic.

Divide the dough into 10 equal portions and roll each into a ball.

Step 5: Assemble the Hot Pockets

Roll each dough ball into a thin oval.

Spoon the buffalo chicken filling into the center and add a little extra mozzarella if desired.

Fold the dough over the filling and pinch the edges tightly to seal.

Step 6: Cook

Toast each hot pocket in a lightly greased skillet over medium heat, turning occasionally until golden brown on both sides and the dough is cooked through.

Freezing Instructions

Let the hot pockets cool completely.

Wrap each individually in aluminum foil or place them in an airtight freezer bag.

Freeze for up to 1 month.

Reheating Instructions

Wrap a frozen hot pocket in a damp paper towel.

Microwave for 3–4 minutes until heated through.

For a crispier crust, finish in an air fryer or skillet for a few minutes.

Meal Prep Tips

Prepare a full batch for easy grab-and-go lunches.

Freeze individually for convenient portions.

Serve with celery sticks, carrot sticks, or a fresh salad for a balanced meal.

Adjust the buffalo sauce amount to make the filling milder or spicier.
